
A recent Rachel Ray episode was for a vegetarian Asian meal. I recorded it, and my son and I thought it would be fun to try and cook "live" with the show, to see if I could keep up. Well, let me tell you, Rachel Ray is a speedy chopper! I had to pause the show once or twice to catch up, but mostly the meal came together at the same time hers did! The meal was Asian Noodle Bowls with whole wheat noodles, veggies (peppers, napa cabbage, edamame, red onion), and a Hoisin sauce. It was good, but I think maybe I would try a different sauce next time. The other two dishes are Teriyaki Cremini Mushrooms and Cucumber Salad. The mushrooms were awesome! The kids were fighting over second helpings. The cremini's were tossed with vegetable oil, teriyaki, green onions, and grill seasoning. Then roasted in a 450 degree oven for 20 or 25 minutes. Easy! The cucumber salad was nice too, but didn't stand out as much as the mushrooms did!

I LOVE noodle bowls, they are so quick to make, and lend themselves to such an array of things that need to be used up in the fridge!!
I'm a pretty speedy chopper, but I don't think I could keep up with Rachel Ray.....I can't believe she made something vegan, most of her veg dishes are very heavy on the cheese, cream, and butter.
Haha my parents had a Rachel Ray meal tonight! (Not a veg one, though.)
I love the turquoise bowl.
We tried hoisin sauce recently and I didn't like it either. Those mushrooms sound so good! You think you could do that with a portabella cap and make a burger?
